Dough ideal for Czech "věnečky" (small braided pastries), "větrníky" (cream puffs), "banánky" (banana-shaped pastries), as well as popular French éclairs and profiteroles
A must-have in every pastry shop. Paloma is a complete mixture for making puff pastry dough cold. It is easy to prepare and consists of three ingredients.
Recipe:
PALOMA 500g
Water 800g
Oil 225g
Mix all the ingredients and let it swell for 5 minutes. Then mix at medium speed for 5-7 minutes until smooth. Bake "věnečky" and "banánky" at 225°C for about 22 minutes, cream puffs at 225°C for about 27 minutes.
