750 g egg foam
150 g water
→ Beat at speed 3 for 8 minutes.
For cake base or babka:
1000 g mix
700 g egg foam
150 g water
80 g oil (optional)
→ Beat without oil for 8 minutes at speed 3, then add oil and mix for 1 minute at speed 2.
